My dinner tonight...

So it's Halloween! Woop, woop! Everybody is out having fun and I'm in the kitchen having even more fun!
Pizza is possibly one of the most rewarding things to make from scratch. The ratio of effort I put in to admiration I get out is brilliant. Nobody makes pizza from scratch because it is so easy to buy already made but it is so easy! And so much healthier and cheaper! Well, with my little cheat recipe anyway...
The base
In a bowl mix 250g of flour with 8 tbsp of oil and 1 tsp of salt. Add water a couple of spoons at a time whilst kneading until all the flour sticks toguether and makes a dough. Roll or stretch out into either one 20 cm flat round base or two 10 cm bases. Grill for about 20-30 minutes, flipping half way through, until both sides are cooked.
This is all the extra food I made tonight ready to be popped in the
fridge or freezer!
Mean while chop (and if necessary fry) anything you want to put on the top. Tonight I used spinach, onion and peppers. When the bases are ready spread some passata or canned chopped tomatoes over the top. Then add all the other ingredients and finally top with some cheese. Pop it in the oven for another 5-10 minutes and then it's ready to eat! Easy!
I always find that as I am only cooking for me I have loads of ingredients left over. Tonight to use up the peppers, onions and passata, I fried them all in a pan and made a nice sauce to have with pasta another time.
My washing up: This is technically an easy recipe but it does take a lot of time and leave a lot of washing up!
